Takes 10 minutes
Serves 2 - we often have to make several batches at the weekend!
Ingredients
2 organic eggs
1 cup oats
1 banana (ripe is best)
1 tsp ground cinnamon
1 tsp baking powder
Butter or coconut oil to cook
To serve: natural yoghurt & fresh fruit
Preparation
Place all ingredients in a blender and blend until smooth.
Allow to rest for 5 minutes.
Heat the butter or oil in a non-stick frying pan.
Ladle the mixture in (3 tbsp per pancake) and cook - let them puff up and allow bubbles to appear before flipping.
Serve with yoghurt & fruit.
Nutrition
To boost these further you can add 1 tbsp ground flaxseed, or spinach to make them green! These pancakes make a great breakfast, on the go snack or even dinner when you want a change. Containing healthy fats, protein and fibre as well as vitamins and antioxidants from the fruit, these make a balanced meal.
